"We think there is a lot of potential for future Portillo's locations in central Illinois, including Champaign, and we are actively looking at our options to expand throughout the region," said Portillo's CEO Keith Kinsey, a 1976 graduate of the University of Illinois College of Business, with a degree in accounting.
