    The persistently mild winter has prompted some maple syrup producers in the north country to start drawing sap from trees more than a month before they ordinarily do. A handful of producers from the St. Lawrence County Maple Producers Association, for example, recently reported they began tapping trees on Jan. 31, according to Jean M. Tupper, who co-owns Tupper's Hilltop Maple Treats in Canton with husband Kenneth G. The couple, who are members of the association, decided to begin drawing sap on Tuesday by using their 900-tap operation's plastic tubing and vacuum system.
