2014 Sterling LT8500 Recall

Diamler Trucks has announced that they are recalling certain model year 2008 through 2015 Sterling LT8500 vehicles manufactured February 19, 2008 through February 11, 2014, and equipped with Cummins Westport Model ISL G and Cummins Westport Model ISX12 G engines. They stated that the condensation in the intake manifold may freeze during cold weather conditions and interfere with the proper operation of the intake manifold pressure sensor. The sensor malfunction could induce elevated exhaust temperatures or flames from the exhaust pipe, increasing the risk of a vehicle fire or burn injury to the person near the exhaust pipe. Cummins and Cummins Westport will notify owners, and authorized Cummins service facilities will upload a new ECM calibration , free of charge. Owners may contact Diamler at 1-800-385-4357. cured and smoked green ham deliciousness

As a lover of ham, I have always wanted to do a Green ham. They are also known as a Country Ham or a Fresh Ham. It basically just refers to a back leg of the pig that has yet to be cured. You can cook them without curing them, but without adding the ham magic to it, it will turn out more like a pulled pork rather than a rocking awesome ham! I was intimidated to start with, but now that the process is over, and the hams turned out awesome, I can’t wait to try it again! Here is what I did. I started on a Saturday morning. My giant hunk of pork was thawed, but it was to big to fit into my smoker. It was a 20 lb Green ham, so I had to make it more manageable. I grabbed a bone saw and cut that sucker in half. If you do this, make sure you have a sharp saw designed for cutting through bone. You will save yourself a lot of time and mess. Cut the ham evenly all the way to the bone with a sharp knife and then use the saw. Now that they are cut in half, go ahead and make the cure. It is a pretty easy combo. I used 5 Cups of Water 1 1/2 Cups of Brown Sugar 1 1/2 Cups of Morton’s Tender Quick – The Tender Quick contains all of the salt and Nitrates you will need to cure the ham. Bring all of those 3 ingredients to a slow boil. Just long enough for everything to dissolve in the water. Let this mixture get cold before you inject the ham or soak them. Once it is cold, go ahead and grab your meat injector and start pumping this ham full of cure. Make sure you have it in a pan as there will be some seepage! Fill the injector, insert as far as you can, push the plunger and slowly pull the injector out as you plunge down so you get a nice mix throughout the ham. Sometimes when it got to the top, some cure would pour out so I would just pinch the top of the meat for a couple seconds. I did this with both the hams. Go nuts on the injecting! This is the ham magic! I threw both the hams into a giant kettle, poured the rest of the cure into the kettle and made sure that the hams were submerged. Every day I would turn and rotate the ham, and every 2 days, I would inject the hams again. On the 3rd day, I actually made a extra couple cups of cure and poured it over the ham. This time I just threw 1 cup of tender quick into 2 cups of water, stirred it and poured it over the hams. I let the 2 hams sit in the cure for 7 days. Saturday morning I woke up and started the smoker and set it for 225 degrees. I soaked hickory chips, and I poured a mixture of water and apple juice into the water pan at the bottom. Once the smoker reached temp, I threw the ham on the middle rack. The goal temp you are trying to reach is 160 degrees. This took about 5 hours. I added wood chips about every hour. The ham came out of the smoker and had a nice looking brown outside to it that you get from smoking. At this point, I still had no idea of what this ham looked like on the inside. Did the cure work and make the ham a nice reddish pink, or did the cure not work and did the ham turn out brownish like pulled pork. Once I sliced into it, all my worries were gone. It was a awesome shade of ham, and it had the perfect amount of saltiness. My first attempt was a huge success. Sunday I repeated the process with the second ham and that one turned out just as good. These were maybe the best hams I have ever made. It was a long process, but man was it worth it! I didn’t use any seasoning on the outside. When the 1st ham was done, I made a root beer brown sugar glaze and threw it in the oven for about 10 minutes at 430 degrees just to really make that glaze stick. I froze the second ham for Eelpout in a couple weeks and then I plan on making a Maple Brown Sugar Apple Juice glaze for it. cinnamon and brown sugar smoked ribs

Rockin! Thats all I have to say. I don’t use a ton of cinnamon in these ribs, but enough that you can subtly taste that flavor in the background. Its a nice touch! Super simple to make. Here is what I did. 1 Rack Pork Ribs 1 Cup Brown Sugar 1 TBSP Kosher Salt 1 TBSP Pepper 1 TBSP Onion Powder 2 TBSP Smoked Paprika 1 TBSP Chipotle Powder 2 Teaspoons Pumpkin Pie Spice The night before I smoke them, I like to mix and the seasonings together and rub the ribs. I then wrap them in saran wrap and inn the fridge they go for the night. The next day, I will take them out of the fridge and let them sit on the counter for a bit. I usually let them sit out while the smoker warms up to the smoking temp of 250 degrees. I also get the Maple wood chips soaking. Once the smoker is at temp, I throw in the ribs in with the curl facing up. I let them sit in the smoker at 250 degrees for about 4 to 5 hours or until you reach a temp of about 180 degrees in the thickest part. Another good tell tale sign that the ribs are done is that the bone ends start to be more exposed and the meat starts to pull back. When I get to about 1 hour left in the smoking process, I like to pull the ribs out, sprinkle on a little more rub, and spritz them with either Apple Juice or Apple Cider Vinegar, wrap them in foil and throw them back in for the final hour. 2013 Chevrolet Malibu Recall

GM has announced that they are recalling certain model year 2013 Chevrolet Malibu vehicles manufactured October 25, 2011 through June 29, 2012 and equipped with the 8 way power adjustable front seat feature. They stated that the wiring harness for the power seat may contact the seat frame which may chafe the harness. If the harness is chaffed enough to expose the wires, a short circuit could occur, resulting unintended movement of the seat, the seat to become inoperative, sparking under the seat, flickering lights, smoke, or possibly a fire. crappie tacos with a lingonberry slaw

These were the greatest thing I think I have ever made that were fish related. I couldn’t cook them fast enough. After the fish was gone, people blew through the remainder of the slaw so quick you would of thought there was gold coins at the bottom of the bowl! Best Fish tacos ever, and they are super simple! Here is what you will need 1) Fresh Caught Crappies, but really any fish would work. I am going to try Walleye next time 2) Oil for frying the fish 3) Salt and Pepper 4) Breading for Fish to fry 5) Lingonberry Sauce – Here is a link to how I made mine http://capturingmi nnesota.com/2014/0 1/23/lingonberry-s auce-recipe-super- easy/ 6) Cabbage to shred for the Cole Slaw or a bag of the pre shredded Cabbage. 7) Flour Tortilla shells Go ahead and pan fry the fish to your liking. I like to use a basic shore lunch breading and I add in the salt and pepper for a little extra flavor. Once you have the filets fried and siting on a paper towel to drain, go ahead and either make the sauce, or if you already have it made, mix it in to the cole slaw. Based off my recipe for the sauce, you will only use about half the bag of pre shredded before the sauce to slaw ratio becomes to off. You can easily double the sauce recipe. Once that is set, the rest is easy! Throw some filets on a tortilla, throw on some of the Lingonberry Slaw, crack open a cold Coors Light and enjoy! So easy, and yet so incredibly awesome! You won’t be let down! Just writing this makes me want to leave work and go catch some more panfish! lingonberry sauce recipe – super easy

I have always wanted to play around with Lingonberry Sauce, but never got around to it. Mostly I think because I could never find them in the stores. At least I couldn’t find a version of them that wasn’t already a jam. So finally I decided I want to make this sauce for some fish so I went on the hunt. First thing when your looking for these is that not every store will have them. I went to Byerly’s and the first place I checked was the fruit section. Nothing. Then I thought maybe they are with the other frozen berries. Nothing. So I asked. I was led over to the frozen poultry section, and between the frozen turkey’s and the frozen chickens, there were little deli containers with about a cup of frozen berries. So I got them, time to make some sauce. This recipe can’t be any easier. Here’s what you need 1 Cup of Lingonberries 1/8 Cup to 1/4 Cup of Water 1/4 Cup of Sugar 1) The berries came cleaned so I just rinsed them off. 2) Put the berries in a saucepan and add the water. 3) Bring The Mix To A Boil 4) Add The sugar till it dissolves. Let it simmer for about 10 minutes. I stirred it frequently. 5) Remove from heat. You can put the pan in cold water and stir for about 2 minutes. This really seemed to thicken it up. Since its Winter, I actually just took the pan outside and threw it in the snow. It felt more Minnesotan! 6) Enjoy I used it on fish.
