Let's all seek out beef alternatives
Recently, 100,000 South Koreans demonstrated against U.S. beef imports.

Beef production accounts for more greenhouse gas emissions than automobiles. Its insatiable demand for feed grains has raised world food prices to levels beyond the reach of the world's hungry.

Creation of beef pastures is the key cause of destruction of the world's forests. A beef-based diet uses 20 times as much land and water as a plant-based diet with equivalent calories and protein.

Nutritionally, beef offers protein, iron, and some B vitamins, but no fiber, carbohydrates, nor most vitamins and minerals. It is replete with saturated fat, cholesterol, pesticides, and pathogens, including occasionally, the prions of "Mad Cow" disease.

Each one of us can demonstrate our own outrage with beef production on our next trip to the supermarket by selecting from the rich variety of soy-and-plant-based alternatives in the frozen foods and produce sections.

I cooked Filet Mignon on the grill last night. I also had grilled shrimp, baked potato and a beautiful caesars salad. I think that provided fiber, carbs and other vitamins and minerals. It was delicious. I would like to thank the steer who's life was taken to provide this delectable delight. Thank you for demonstrating your own outrage with beef production and I hope you enjoy your Tofu.

Frozen, highly-processed soy foods to reduce environmental impact? There are much better alternatives including dry beans, grains, and local fruits, nuts, and vegetables.

I don't know if a similar service is offered in Las Cruces, but Sun Metro offers paratransit transportation through its LIFT service which provides on-demand transportation for those who qualify.

Vegetarians won't do well in a depression. Even with the supermarkets overflowing with food the people in the 30's never heard of, vegetarians still have to know how to get their nutrition.
That's all the proof I need that it's not a natural way to eat.

Tell you what Gil Lawrence / West El Paso... you eat what you want and I'll eat what I want. Some of my favorite meals include beef: lasagna, steak, cheeseburgers and hot dogs. The message on Jessica Simpson's t-shirt said it best: "Real girls eat meat."

Mr. Lawrence:

I'm a vegetarian, but I don't spend my time preaching to non vegetarians about my habits.

I am more than happy to make meat for dinner for my husband, even if it means I have to make extra food for myself.

People like Mr. Lawrence give the rest of us a bad name. Most of us don't get on a soap box, trying to make everyone else conform to our ideals.

I apologize for his small mindedness.

Now this is a lady who we should all show a gr8 deal of respect. Thank you for understanding choices of food are exactly that.... a choice. It is refreshing to hear from a vegetarian who understands that her choices do not have to be everyones choice. I commend you for your lifestyle and your tolerance for not holding everyone else to the same standard. Thank you Virginia. I am going to eat a nice salad tonight in your honor.
