New to Classical Music question about string quartet

I'm relatively new to classical music. I'm a musician but not classically trained. I am starting a study of Beethoven's string quartets to learn more about harmony and composition.
I thought if I downloaded a score and listened to a recorded while following along in the score that would be a good place to start.

I was able to download the score in 4 different movements.
I then downloaded a recording of the first string quartet from iTunes from the Emerson String Quartet.
I was suprised to see that the recorded varied from the score I downloaded. I thought classical music was considered sacred and never deviated from the composer's work.
In the recording after measure 114 they go back to the begining and repeat the first 114 bars before continuing with the rest of the piece.
Also measures 301-308 on the recording are very different than the score I downloaded.
Can anyone clarify this for me. Is there some definitive collection that stays true to the original work?

I'm sorry I just read my post and I wasn't clear on the score I downloaded. It was Beethoven's First String Quartet.
