It was a euphemism. A more accurate suggestion would be that christians believe in an "incorporeal manifestation of their ego as omnipotent embodiment of justice in the sky.......buddy" Sky buddy just rolls off the tongue, though.

It's not necessarily 'how' it's interpreted.

In the case of Leviticus, it's pretty clear. It was written Laws for the Levite people and nothing else. It's recorded in the bible for history, for future generations and cultures to learn from and to not repeat the same 'evil ways' they did.
