Morning everyone.
What a beautiful day to be on the ocean yesterday.
Did pretty good, 15 or so Haddock and Cod.
Almost had one big enough to win some money in the pool.

Can't say that I've ever had blacktip, cajan or otherwise.
I like baked Haddock best. Lemon, butter and salt. With rice.

never tried blackened blacktip, but it sounds good. I have made blacktip Parmesan that came out really good.

So a question for all you chefs out there--how do you know when the fish is blackened or just burnt?

Princess, it's just the color, not burned. Mix, pimienta negro
and cayenne powder with a bit of flour. Brush fish with milk/egg drench in mixture and deep fry.
Hunglo, you may use any fish or reptile you heart desires. I personally recomend a small gator, very tender. Grouper is good too but pricey if you must buy it. Well with the cost of fuel, it ain't cheap to go out and catch it either. It is more fun that the store though.

Unfortunately, fresh gator is tough to find up here. I will agree that it is much more fun to catch them than to buy them.
