I know that pork always should be cooked well done because of the bacteria that usually comes with pigs and that beef can be cooked very rare without any similar danger.

i wonder though what the deal with horse meat is...

Also pig meat is referred to as pork and cow/bull is called beef (calf is called veal)
But what do you call horse meat?

For safety, cook ground meat from horses to 160 F, or until juices are clear with no trace of pink or cloudiness. Roasts, steaks and chops can be cooked to medium rare 145, medium 160 or well done 170. Less tender cuts should be braised roasted or simmered with a small amount of liquid in a tightly covered pan) or stewed.

Horse is supposed to be big in Europe. I've been to feed stores that had horse meat for sale (YEARS ago), and it was a little different color than beef or pork, but it looked good enough to me. And oddly enough, like game, it is supposed to be better for you. But I don't see us trying it anytime soon.

Too many other tasty critters to scarf down first.
