You're in Florida. Nobody really cares what you think. Madrid needs a good restaurant. Whether this turns out to be it or not, only time will tell. The Mineshaft, since it's new owners just pretty much sucks.

I wish anybody luck in starting their own business. They take a big risk and must work hard, long hours to get it going.

Southern cooking is to die for. It is well documented that the Southeastern USA is the "stroke belt". What does this place offer that is an improvement?

Good luck to you Novak. I am a professional chef and live in Madrid part of the year. I am looking forward to seeing some new food there. Madrid has a lot of potential and it is nice to see some new blood come in with new ideas. I agree with Arnulfo........restaurants without a beer/wine license tend not to make it. So get that soon. Also, why not think of being a microbrewery. Although the water in Madrid is terrible........and you may not have room. You could import some brews from some local breweries within a 50 mile radius. Also, talking about keeping it local............I hope you'll support area farmers and buy as much locally as possible.

We LOVE the food, the presentation, the entire atmosphere --- The Hollar is fabulous!!! a group of us who live in the area go out every friday and we are very happy to have the Hollar so close by! i know the beer/wine license is close to being issued; even without it, they are VERY BUSY every day, and even the most critical folks in the neighborhood give the food A++!! KEEP UP THE GREAT WORK JOSH AND CREW!!! We look forward to decades of excellent food and fellowship!

I thought the food was fantastic and I'm from the South. The best fried okra I've ever had! Can't wait to try the fried green tomatoes. YOu were out on my visit.

Josh, we are so proud of you. Cassidy shared this with us after talking to you the other day. Who would have thought that crazy will f6773rat boy would have his own successful restaurant. Hopefully, Johnny & I will get a chance to visit it soon.
