In the Torah there is written - You shall not take the name of the Lord, your God, in vain, for the Lord will not hold blameless anyone who takes His name in vain.<quoted text>I don't care if you type "G-d." I simply wonder if GOD REALLY AND TRULY gives a damn if you arrange certain symbols together so as to impress "G-d" that you are showing proper respect.

What is the name of the lord their god? Is it god or YHVH? YHVH is its name while god is just a title and nothing. Ancient Jews when they came in contact with Christians, have seen they call the creator by the word god, thinking its the name, so they started to avoid pronunce the vowel and omit that when they write the word god.
This mistake is still followed by the most of the Jews of today.
Anyway, you're right, what's the matter for a creator if one says g-d, god, YHVH or YAHVEH? Nothing, nothing at all. They are man's rules.
