ALL color is merely a trick of light.
Different substances absorb and reflect different wavelengths of light.
That said, claiming the eyes are not actually blue is just silly. Since the blue of the sky is produced by similar scattering effects, the same reasoning would lead to claiming the sky is not actually blue.
