In the case of dark matter, we use the effect that dark matter has on passing light. The lensing of the light allows the detection of the dark matter, just as the reflection of light allows the detection of a flower. Both are examples of observation.
Doc, they don't know what dark matter is. Impossible to observe an effect of an unknown and be 100% certain that what ever is being observed is in fact the full and only effect of a unknown single item.

Using the flower analogy you don't know if you're smelling one flower or a field of many types of flowers.

Bart Ehrman in his book "did jesus really exist". he defends the historical jesus. now as you know, ehrman is not friendly to theists in his writings. also, youll find that many even in the jesus seminar (a mostly atheist group) also agreed on the existance of jesus, although they disagreed about his teachings. the fact is that as popular as it is becoming to say that jesus never existed, the mainstream consensus is that there was a man called jesus of nazareth.

Life is symmetrical and everything has its' opposite. God is an everlasting light and the opposite of this is darkness where Satan dwells, a black hole.
