My wife make a variant of Borscht which uses no red beets but DOES include chopped Dill Pickles and a smidgen of pickle juice. Yumm. There is some in the refrigerator now. Time of post this and start the microwave. I will think of all you Borscht lovers while a enjoy an early lunch.

My wife always makes Borscht with white beats. My favorite has always been zaleniy borscht in the summer.
