For Brownies
2 large ripe avocados, mashed as well as you can (about 1 1/8 cups)
8 ounces high-quality dark chocolate, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons avocado oil
4 ounces high-quality dark chocolate, chopped
For Frosting
1 large ripe avocado
2 1/2 cups powdered sugar
1/4 teaspoon vanilla extract
Directions:
For Brownies:
Preheat oven to 350 degrees F. Liberally spray a 9-inch square pan with non-stick spray.
In a large bowl, whisk mashed avocado and melt chocolate. Whisk in sugar until combined, then add in eggs and vanilla extract, mixing well. Add in flour, cocoa, baking powder and salt, mixing with a large spoon until JUST combined - do not over mix. Stir in avocado oil until it's well distributed and batter is somewhat smooth. Fold in chopped chocolate, then spread batter in pan. Bake for 28-32 minutes, or until middle is set. Remove and let cool completely, then frost and top with grated chocolate if desired.
Note: I placed these in the fridge (covered throughly with plastic wrap) to store and when eaten immediately from the fridge, they can be even denser and slightly dry, so I recommend letting them come to room temp or even placing them in the microwave (we did this!).
For Frosting:
Add avocado to the bowl of an electric mixer and beat until mashed and creamy. With the mixer on low speed, add in vanilla then slowly add in powdered sugar, scraping down the sides if needed, until a smooth frosting forms. Frost brownies once cooled.
That is a keeper Vee...I love avocados, so far have only had them addedto salads or mashed on toast, very healthy indeed and thanks.

I mentioned this to P and he reminded me of when he had his motor cycle accident as a young man, his leg was smashed, both fibula and tibia had compound fractures...yet he never felt a thing. I've been working outside in my flower garden yard and at my Sisters house for the past week and I am stiff and sore in places I din't even know could get stiff and sore...hahahahaha
I do hope that the doctor won't give you a hard time for seeking attention other than his for your injury...
We are finally having warmer weather and I have really enjoyed it very much.. We reached a high of 74 today... I can only hope that the rain will pass us by for a few more days..
I have started designing some new flower beds and I really want to try and get them all taken care of before the next rainy season hits...
I now have a grand total of 96 Gladiolas planted in the front yard... There are 66 of them planted behind the rose bushes and 30 planted around the light pole...
My next big plan is to start transplanting the Dianthus... I am going to put them in front of the roses and hostas.. That way I will have layers of color.. and the Leaves of the Glads will serve as a nice backdrop for all of the flowers.....
My Pack are all doing well.. I hope that your Pride is too...

So good to hear from you this morning...sounds like you are
going to have a beautiful garden for all your efforts you have put into it at this time. I do like the compositions of plants you have in your new borders, all my favourites! I saw Gladioli and
rushed out to the chalet where I keep plants ready to be put out, I have all of six glads still in the pack which I didn't plant last year, little green shoots appearing, I will start those off this afternoon. I have Hostas in pots, last year put one in the border but it was eaten away in no time at all, I am waiting for it to show itself and I will dig it up and grow it on in a pot.
Am off to Port shortly to buy bags of compost as am re-potting five conifer trees, one down four to go. Aye, it's an exciting life...haha..but I wouldn't want to trade it, would you? Nearer to God's Heart.....
Have not forgot the video of my garden I promised to send, will
send later on when I get back. Promise.

above and nearly spilled the tea laughing so
hard when you mentioned Tom 'lobotomy' Jones!

Ha! Ha ha ha ha!

I can kinda see what they mean,
he remains quite silent and ponders more
on the acts than the others seem to..

altho' in fairness they are all good..
but, as I mentioned previously that leaping about on the
chairs is very unprofessional & unseemly, IMO.

actually ive had an operation for a blown disk while ago, so i guess thats considered broken. Worse pain ive ever had, worse than giving birth and i think of myself as having a high tolerance for pain, but honestly if that operation didnt work i'd been just as happy to die on that table right then and there..

LOL! Got to laugh at that description, she is very cutting
that journalist but good to read all the same.
Wish I had an avocado in just now, nothing nicer for a spot
of lunch on toast, with a squirt of lemon perhaps.

That's a lovely song PFfff..and thinking such as I do helps me stay reasonably sane!...:) I often wonder if I myself would live
up to my father's expectations? Maybe now I am older and as my

You got it right by saying that those we have lost, live on in
our memories, I am thankful for the short time I knew mine...
