Cucumber & Onions:
Equal portions of each
Equal portions of apple cider vinegar & water
sugar to taste
shake & chill
add sugar if needed-shake-chill

CORN DODGERS

2 cups cornmeal
2 eggs
1/2 teaspoon salt
1 cup flour
1 tablespoon baking powder
1 1/2 cups milk
onion powder
salt and pepper to taste
peanut or corn oil for frying

Beat eggs well and stir in milk.

Combine all dry ingredients, sifting together. Stir dry ingredients into milk and egg mixture. Beat one minute.

Heat peanut oil or corn oil to 350F.

Drop by small teaspoonfuls into deep fryer and turn once. Remove when golden brown.

Season lightly with onion powder. Drain on paper towels and serve.

Wilted lettuce:
Loose leaf lettuce - broken or cut
green onions/with leaves/ chopped
sugar to taste or 'splenda'(dissolves better)
2 or three stripes of bacon sliced in 1/2 inch stripes
fried to crispy-pulled off heat and vinegar added
When the [ sizzling slows down ] pour over lettuce and onions
feather it in... flip flop it!

Gona \experiment/ with cucumbers and fix them as "Fried Green Tomatoes"
Batter of 1/2 flour-1/2 corn meal (salt & pepper to taste)- 2 pinches of brown sugar
bast good & pan fry in Crisco.[Best think there is to use in pie crusts!]
include egg or 2... with 'whole milk'
:: then ::
try it mixing the breading + egg with beer - dipping the cucumber slices and deep frying those.

Another way we like cucumbers: slice cucumbers, ripe tomatoes, and green onions in bowl coat with Italian dressing. Chill and serve. Again you can use any onion but in this we prefer green ones.

larger cucumbers I use a peeler but give it sides

the different sizes and shapes help them mix with the onions

I like a fruit salad made with seasonal fruits. Some of the ingredients change a little from month to month; berries, blue, black, straw, etc.with peaches or nectarines; melons and so forth. Add some tropicals; kiwi, banana, pineapple. Delicious!! I don't much care for citrus, but some folks add oranges and/or tangerines.

Cut the fruit into bite sized pieces, mix well. Chill for one hour. There should be no reason to add sweetener, as the various juices mixed together make a nice "sauce."

Stuffed Zucchini

1.Preheat oven to 350 degrees F (175 degrees C).
2.Trim stems from zucchini and slice lengthwise. Scoop out seeds and put in bowl. Mix seeds with sausage, garlic, bread crumbs, and parmesan cheese. Give husband a handjob while he waits. Stuff squash with sausage mixture and place in 9x13 inch baking pan. Pour sauce over squash and cover pan with foil.
3.Bake in preheated oven for 45 minutes, or until sausage is cooked. Serve your husband a beer. Remove foil and cover with mozzarella cheese. Cook until cheese is melted.

Blackberry pie:
bought pie shells
mixed 3 cups of blackberries & 1 cup of blueberries
I/2 cup of sugar & flour over'm-toss & toss
place in shell of pie pan- level
put cap ( top crust on) slit to release heat.
425 for 15min .... 375 for 20 to 25 minutes
Brushed top crust with milk and sprinkled
cinnamon and sugar on top.
Made one already from scratch, it was deliciousS!

Squash Casserole Recipe

Serves: 12
Ingredients
2 tablespoons butter
4 cups sliced yellow squash
1 medium onion, chopped
2 eggs
1 cup grated cheddar cheese
1 cup milk
2 tablespoons butter
¼ teaspoon cayenne pepper (optional)
½ teaspoon salt
½ teaspoon ground black pepper
1 sleeve Ritz crackers
Instructions
Preheat oven to 350º F.
Melt 2 tablespoons butter in medium skillet or saute pan over medium-low heat. Add squash and onions and cook until tender.
To a large bowl, add eggs and lightly whisk. Add cheese and milk and whisk into egg until well-combined. Add cooked squash and onions to egg mixture and stir well to combined. Melt remaining 2 tablespoons butter in skillet used to cook squash and onions. Add to squash casserole mixture. Add cayenne pepper, if using, along with salt and pepper. Stir well to combine.
Spray a 9x13 casserole dish with cooking spray and pour squash casserole mixture into the baking dish. Top evenly with crushed Ritz crackers. Place in preheated oven and bake 45 minutes, or until top has lightly browned and casserole does not "jiggle" when the dish is moved.
Allow to sit for about 3 minutes before serving.
