Sounds yummy ! Do you have a recipe for your homemade meat balls ? Mine never turn out good . Thanks in advance .
We have so many tomatoes in our garden . I will try to look for recipes for them. Maybe a quiche ?
deep dish pie crust
5 or 6 tomatoes, sliced
1 small chopped onion
1/2 tsp basil
1/2 tsp oregano
1/2 tsp parsley
salt and pepper - to taste
1 cp mayonnaise
1 cp shredded cheddar cheese
Prick the bottom of the pie crust with a fork several times and bake at 350 degrees for 8 to 10 minutes.
Line a paper towel with the sliced tomatoes and then place another paper towel on top of them to absorb some of the moisture.
After the crust has cooled, put a layer of tomatoes on the bottom and sprinkle with the onion. Sprinkle with the seasonings and repeat another layer. Top with the cheese mixture and bake for 30 minutes.
May sound a little weird but it is Really Really good. I always make them in the summer.
