I kind of surprised myself at how well it tasted ... I will sometimes try to invent new things in the kitchen and it's usually only okay. That was a TOTAL home run. I thought of it because I wanted something that tasted like chicken pot pie, but without having to make an actual pie.

I did a lot of eyeballing with my ingredients otherwise I would share the exact amounts of things, but this may be helpful:

I would say I used about 6 chicken breasts (I used chicken strips, but I would guess it would equal out to about 6 whole chicken breasts). Cut them into one or two inch cubes.

I used a quart of the chicken broth (I think it’s a quart … one of those containers made out of waxed paper)

I used two regular sized cans of cream of chicken.

Another veggie that would go well in there would be green beans I thought, but it was fine as it was and I’m sure you could add just about anything to it.

Don’t forget the onions and flour too (Flour will thicken sauce … think I added about 2 or 3 table spoons, but you can always add more at the end if it is not thick enough for you … probably best to go easy on it and if it is not thick enough at the end add a little more)

You get a lot of your flavoring from the poultry seasoning … I added some at the start and then as it cooked I tasted it and found that it could use a little more … so I added more maybe an hour before it was done … probably best to go easy on it at first and add more if you need it.

Just tear pie crust and roll it into little balls maybe an inch to an inch and a half in diameter (I used two pie crusts).
