Hey there Steph good morn. Rotel~ a brand. Diced tomatoes with jalapeno peppers and onions. The dips made by melting velveeta and mixing them. Some add mexican sausage or hamburger meat. Served hot with doritoes or nacho chips.

i used to LOVE Velveeta as a small child. my parents only got it for "special occasions" like road trips. but they instilled in my head that it wasn't really "food," and this was only a rare treat. i haven't had it in 30 years, but the memories were sweet.

So I went to the store and forgot my list . Forgot to pick up Velveeta , but remembered Rack of Lamb , asparagus , yams ! Rotisserie here we come . Remembered the tequila too !
