We do have evidence that shows the creation myth of Genesis never happened.

And you need to remember, to even consider that something is possibly true it is the onus of the person making a positive claim to submit evidence supporting their claim. If you want anyone to believe your creation story you need to show some evidence.

So it can either signify the presence of something with those properties or the absence of anything with those properties.

Darkness or dark is not describing a state of nothing, it is a condition that either does not react or absorbs photons, that means it can be empty space, or matter that is dark.
Empty space is not completely empty, but can lack sufficient matter to reflect or react with light.
