Since I have to cook in the afternoon so DH can eat before he goes to work at night. Its usually easy as I can get by with.
I just got out some chicken patties and baked them then added some gravy from KFC I saved, on top of it. probably have some lima beans on the side and some sweet tea to drink.

The way I make mine is I mash it really good and I add enough mayo until it is creamy. I Use Hellman's ONLY. A lot of people add pickle juice) or onion, or a touch of mustard and I add nothing because I like it simple. I love it warm. I also like tuna and mac salad. I like that hot or cold.

Also, I was never a fan of meatloaf either because people dont know how to make it. But I like the adolf's meatloaf mix, the topping on there is really good. It comes in a packet and is always by the packaged ground beef.
