All Recipes is one of my favorite sites, you can easily change serving size, it has reviews that frequently give good ideas, it has a great 'how to' section, and they have a healthy recipes section here.

I make this soup in a variety of combinations to use up leftover vegatables. I prefer fresh or frozen veggies to canned and I always skip the tomato in this one. I also add the onion and cabbage last. It's easy to make it to suit your tastes. I also add different herbs and spices to add to the flavor, depending on what I have. It tastes a bit different every time.

When I'm only cooking for myself, I make a quick and easy lowfat meal of rice and frozen veggies, a bit of soy sauce and it's a hot meal without a lot of mess. It's high in carbs, but low in fat, and has a lot of protein. I've heard a lot of people have had success with the low carb diets, but I like the fruits and veggies too much. Cereal, like raisin bran is a good snack when I want something a little sweet, and it's lowfat as well, especially with skim or 2% milk. Even some of the sugared cereals are less fat and calories than most sweet treats, when you really have a craving.

I'm sure others will have lots of good ideas too!

Apparently the Topix filters don't like the healthy recipes! They didn't like a tuna casserole recipe either. I'll try posting the links separately, to see which one Topix didn't like.

My Aunt Hattie’s Eggplant Relish.

Ingredients:

1 Medium size eggplant
2 Green peppers
1 Medium Onion
2 Cloves fresh garlic
1 Grated carrot
1 Grated celery
1 Ripe skinned tomato
Vinegar
Oil
Salt and pepper

Directions:

Bake eggplant and peppers in shallow dish 375 degrees.
Turn every 10 minutes until soft. Approximately 45 minutes.
Run peppers under cold water.
Remove skin and seeds.
Cut stem & peel eggplant.
Chop, process or blend peppers and eggplant.
Peel and press garlic and add all of garlic.
Add carrots and celery.
Grate onion and add along with diced tomato.
Add 1/4 cup vinegar (cider, wine or regular) and mix.
Add 1/8 cup oil.
Add salt and pepper.

Tastes! Add more vinegar or oil until you decide it taste right. Makes almost a quart. Keeps for months in the fridge and is great on ham sandwiches or crackers.

Serve as an appetizer.

* I've never made it. Had it a few times. It was good with Guinness.

Caramel Apple Coffee Cake

2 bx jiffy apple cinnamon muffin mix
2 eggs
1/2 c milk
1/4 c cooking oil
1 can(s) apple pie filling
2/3 c caramel ice cream topping
cinnamon
chocolate syrup - optional
shredded coconut - optional

Heat oven to 350F.
Butter bottom and sides of a 13x9 baking pan.
In a large bowl, combine mixes, eggs, milk and oil. Stir together until well blended.
Fold in apple pie filling until well distributed. Spread evenly in prepared pan.
Sprinkle generously with cinnamon. Drizzle carmel topping over entire cake. With a rubber spatula or butter knife, swirl caramel through batter for a marble effect.
Bake at 350F for 30-35 minutes, or until toothpick in center comes out clean. Serve warm.
If desired, garnish warm slices with a drizzle of carmel topping, chocolate sauce and a sprinkle of coconut.

I like the steam fresh vegetables and a chicken breast cooked on the George Forman... Tyson has some real good grilled chicken breast- seasoned and really flavorful... Bit pricey, cheaper to do your own. Baked etc..
