Mole (MO-lay) is a long-cooked misture of dried and roasted peppers, ground together into a paste. It´s relatively easy to find in specialty shops and online.

Jars of mole are most easily used by diluting the paste with chicken stock until it´s thin enough to braise whatever meat one wants.

Think of it as a braising liquid makes it quite easy to use.

When in doubt go to www.foodnetwork.com and do a search for recipes with mole.

I tend to favor Emeril, but my Beloved is a BIG Barefoot Contessa fan!

Ah, the Queen of Butter! I've actually tried a few of her recipes that I've gathered from the Food Network website and they came out very nicely.

Well, maybe, maybe not. A lot of that "chemical crap" goes into the cows to make them grow bigger, meatier, and so on. The only thing that is half-way safe these days is something you've raised yourself.(But I can't "raise" an animal and then slaughter it for food so...)

Very true, that's why it's organically fed, free-range meat for me - it's expensive, but doesn't have the chemicals and it's actually tastier.
