My 2000 Victory keeps shutting down and dying

I have had this in a shop they said nothing is wrong, I said can I make it happen for you so you can see what it is, no they said, then they charged me $80 and told me they couldn't get it to do what I said it does. I just don't trust motorcycle mechanics in my area, or any area. I just don't think they have enough smarts to figure it out. I am going to figure it out myself. I am going to ask here first, then I will hook up my laptop to it with a program I will have to make to watch all the sensors fuel pressure etc. Time is my problem. I have replaced the fuel pump. because it had one replaced in 2003 because it was a recall. After some research found out that the 2003 fuel pumps were crap too.So I put in a 2010 model, I hope. Didn't resolve the issue. Here is what it does: It will either just die or you can be doing fine in 1st gear, but as soon as you shift and get on it in second it craps out and quits. It will not restart right away. At one point when this happened I heard the relay going click, click, click. I bypassed the fuel pump electronics and switched it to stay on all the time for a test. Did not resolve. My next test is to see if I actually have fuel in the line and enough pressure, 55lbs I am told, also check the throttle control sensor. Oh it has a new battery, actually a second battery, a better battery this time. Any ideas or thoughts are greatly appreciated. I am mechanically inclined and electronically as well. I can build electronic items from scratch and create my own programs to use on the computer to test this thing. Does anybody have a pinout of the electronic control for this bike? I even have called the manufacture on this with no help. Its been sitting now for almost two years. Only because I don't have time. I will make sure to start with fresh gas and clean all the lines etc before I begin again. I has a fresh oil change just before I gave up on it.Even though I have the ability I really didn't want to have to mess with it, nor do I want to pay somebody that only going guess and try this part and that. That I s why I have to do it. Then I know what needs to done and get it done. I can check the sensors etc. I would say at this point that a sensor is causing the electronics to shut down. But once it shuts down, something must have to cool down in order for it to work again. The reason it doesn't start up right away, even with the fuel pump running it wont start. The pump was running because I put a bypass switch on it for testing purposes. When this happens I switched over to make the pump stay on as a test. Thanks for reading anxiously await your response.

Throttle Position Sensor? Clean the MAP, injectors, throttle body? Check the coil output?
