The florist is wrong. Throw em in jail and move on. (This legal stuff is easy. :))

The florist would be supporting a gay wedding perhaps if she discounted of gave them the flowers for free.

Otherwise, she's being paid to provide flowers. In order to provide the correct type of arrangement she needs to know what flowers are being used for but that professional information does not give her the right to impose a personally held moral judgement on the use of the flowers.

Now - if she openly and consistently advertises herself as a religious institution or a flower shop being run by a religious order then maybe she might have a case.

I'm fairly certain the flowers don't care.

I agree. Now if she says she won't do it because "it violates her Christian beliefs", would she say the same thing if a couple ame in for flowers that were Jewish or Muslim or Buddhist or Hindu, or some other religion that does not believe that Jesus Christ is the Risen Savior ? Why would she not claim in those cases that doing so would violate her religious beliefs ?
