The culprit is NOT mayo, as most people believe. The culprit is actually the onion.
Mayo requires NO refrigeration, is stable, and does not degrade because of warm ambient temperatures on a hot day.
My best advice, avoid the onion in your potato salad when it is going to be outdoors, without refrigeration, for extended periods of time.
