Not being told everything?

Im an 18 year old student who has been diagnosed with celiac disease for 6 years now. I went to the hospital yesterday for a checkup with the Gastroenterology team. I have only recently started seeing the doctor who told me that after a blood test my result was 80 which was off the scale whereas a celiac disease patient should be below 8. I don't think they explained everything to me as before I saw children's doctors in another hospital. I asked heaps of questions but seemed to come away just as confused with what I have. I have tried researching this on the internet but it's far too complicated finding the right stuff. Being 18 I have found sticking to a Gluten Free diet very hard and only seem to annoy the Doctors and Dietitian when I see them. I've not had much help or support from parents or the doctors and have been kept in the dark. Any help would be really great.
