Obviously, you didn't bother to watch the whole season as you would have known the judges unfavorable belief on chefs cooking within their comfort zone. They gave Sam a whole speech on 'playing it safe' during the finale and sent him home because of it. So to assume that it was alright for Ilan to do so is unbelievable. Marcel was innovative and cooked dishes he had never done before. This was what the judges had been stressing from the beginning. In fact at the judges table they raved about his dishes while ridiculing Ilan's 'same ol' same ol' Spanish dishes, so why the total 180 by choosing him? And yes, some might say Marcel's underdevelopes social skills might have played a factor in his loss, Ilan was not a person of integrity. He bullied Marcel any chance he got and truly displayed poor sportsmanship throughout the season. In the end, the judges decided it was not who's food was better but who was mature enough for the title. To say that Ilan was 'mature' is an insult, he was downright mean and still to this day I believe he robbed Marcel of that title.

Ilan didn't deserve that win. He has poor culinary skills to be matched with his poor people skills.
