Water Cooled VS Air Cooled

I am planning to start a frozen yogurt shop. I've seen the machines, they are water cooled and air cooled. Each air cooled require 1 TON A/C. I would like to compare which cooled option is better. Let's take for example the requirement for six machines.
1. Six water cooled machines require:
1.1 Airdyne Glycol GP6
1.2 Airdyne Glycol Installation, it is my understanding that could be expensive
1.3 Airdyne monthly consumption electricity KWH and Water
2.- Six air cooled machines require
2.1 Air conditioned of six tons
2.2 Air conditioned installation
2.3 Air conditioned electricity consumption KWH
One issue I see with the water cooled is the single point of failure of the GP6
Does anybody has solid number on the subject?

This post is a little older, but I'll tell you what we did. We didn't number crunch, persay. But it ultimately came down to the fact that the water cooled machines are much quieter. The last thing you want is a busy shop with all 6 machines blowing. Noisy.
