old world sicilian/Albanian soft cheese

Hello: My Grandmother from Sicily used to always have a soft very white circular (8 to 10 inch) 2 inch high soft cheese cheese that kind of looked like it came from a mold. They would cut a small thin slice and usually salt it. It has the consistacy of soft tofu. Any ideas what it could be?. I think it was from sicily maybe Albania.
