We can do well without meat, and would benefit by it.

Just to argue, plant life is a sentient being as well. We displace living organisms just by breathing, thereby causing their 'death'. Comment?
The statement of plants being sentient still cannot be compared to animals. The point of being vegan is to minimize and eliminate suffering of other beings. Plants are not beings and they do not have central nervous systems. If you chop carrots, broccoli and an apple and if you slit the throats of a cow, a pig and a chicken, there is an obvious difference. We KNOW the animals feel pain and they fight for their lives.
