Agreed. The cocktail renaissance has yielded some insufferable bartenders who take themselves too seriously. And you rightly state that cocktails should be made the way the customer wants them, not how the bartender wants to make them. So why can't I get that? When I've ordered a Manhattan I cannot remember ever being asked how I would like it. Even when I request stirred not shaken, the bartender usually just goes on autopilot and shakes. I think what this guy may have been trying to complain about is the lack of standards in the bartending profession as a whole. Why aren't customers asked how they would like their cocktails by bartenders and wait staff?
