Get more bar backs to work inside and out to control fighting. Have a qualified person at the door who knows how to thoroughly check ID's.
If someone gets rowdy, throw them out. If they are intoxicated, have them call someone to come get them or call a cab for them. That person can wait outside with the barbacks there. Make sure your barbacks are big enough and experienced enough to handle large strong offendors. Have your barbacks monitor the parking area for people trying to drink outside. They can tell them to go in or get going. The bartendor or waitresses if they have the should be able to tell when a patron has had enough and refuse to serve this person anymore alcohol. If this owner would enforce this way of doing business, he wouldn't have any trouble with this to begin with.

Too bad, we don't have the Patrick Swazye "Roadhouse" clan to inforce the rules. Yea,it costs money to hire a cooler and bouncers. But, do you want a nice place for people to enjoy themselves, or do you want a blood bath every night. Power drinkers, college students, whores, dope heads. It all adds up, to a bad time, in the ol' town tonight.

I was a partner in a club in Memphis before tiring and I will tell you that a bouncer is one of the most important employees in a club. You need a person of enough physical stature to discourage the average person from wanting to tangle with them but you also have to have a person with the right temperment. A bouncer who wants to fight is a lawsuit waiting to happen. One out of ten bouncers has the right stuff for the job. They have to have the patience but firm resolve to cool out rowdies without making them more agressive or causing more of a scene. Most important, they have to have firm discipline and control of their tempers. You can put any ape up as a bouncer, but your asking for trouble if you don't get the right kind of person!
