Even on cold days, Starbucks insists on blasting its air conditioning in all of its stores. There has to be an answer beyond the stock response that all employees are obviously trained to deliver, "It's set that way and we can't change it." if it's a ploy to get people inside to buy refills of hot coffee, that's a hell of a carbon footprint to plant to turn a profit. I've talked to a few environmental organizations who are willing to assist me in an expose' of the egregious practice of spewing air conditioning when it's unecessary.

I'm freezing my ass off in a Starbucks right now. It's 60 degrees outside, yet they still have the ******* air conditioning on.

Also, I think it may be to keep people from staying too long in the lounge area, reading or using their laptops.
