Save and read a ADC value of EEPROM of ADuc706x

Hello everybody,
i need your help. I have a microcontroller ADuC7060 with internal ADC and Flash/EEPROM. I want to be able to save or store a certain converted digital signal in an EEPROM by the use of a switch button.
I want to be able to reuse the stored digital signal with on-coming signals in the ADC-Register where the formally stored value will function like an adjustment value. i.e the formally stored value will always be subtracted from the on-coming signals ( i.e i will give the to be stored digital signal a negative sign so that it can always be subtracted). I use in the moment keil(µVision3) compiler
how can i write the command code
