I too make pancakes from scratch. I do use a recipe found in a cookbook - but i do a couple of things to improvise a little. Such as, the recipe calls for one egg - i use two. The recipe says 3/4-cup of milk; i use closer to a full cup, else i find the batter a bit too thick. Despite these changes they seem to turn out ok...my family loves 'em!

Pancakes are not heavenly unless there is real maple syrup and whipped butter.

The purpose of pancakes is to serve as an a convenient sponge for maple syrup and whipped butter which are too difficult to eat on their own.

I love to make my pancakes almost raw. I cook it just enough to form a circular shape. The combination of the syrup and the raw pancake batter on the inside is delicious.

If you ever run out of eggs, you can substitute with mayonnaise. The pancakes turned out really nice.
