Does anyone have any recipes for homemade BBQ sauce or canning hot peppers with weinies or pepperoni? what about kraut? thanks everyone.

chop or shred cabbage, mix 1 cup salt to one gallon water, pack cabbage into jars, fill with water- salt mixture,put lids on, but not extremely tight. let kraut "work" for about a month, without opening.my niece mixes delmonte corn and green beans with hers and it is delicious.

Yes, I have a very good recipe for the weiners and peppers......makes 6 pints

2 cups vinegar (cider)......3 cups white sugar..
2 gal. hot peppers..........1 tbs. canning salt..
2 cups Wesson Oil..........2 or 3 pks. weiners..(cut in bite siz pieces)
1-32 oz. Ketchup..
Mix in large pot all ingredients except peppers.
Cook on medium heat until hot enough to boil. Stir periodically and let simmers on low heat 5 to 10 minutes. Add peppers & let simmer until peppers are softened & wilted. Place in jars and seal.

this is the one I use.

Pickled Beets

twist off tops, leave roots intact. Put beets in large pot cover with water and bring to boil; cook til tender and skins start to peel; about 1 hour. place beets into cold water,peel and put in jars. Use small one whole, slice the larger ones.

1 cup water
1 tbls pickling spice

bring first three to boil, stir til sugar is dissolved. add spices. Pour into jars over beets.

clean rims of jars and seal.

These turn out really good.

This is the one that I use, but I buy the whole pickled beets in the can at Goodson's. I used to go through that mess of cooking my own, but my family really thinks these are just as good. I have to take their word for it, because I don't eat them.

Makes one quart.
2 cans of small, whole beets ( use juice of 1 can)
1 cup vinegar
1 cup sugar
1 cup water
1 Tbsp. pickling spice

Boil pot of water and pour into your clean jar to sterilize.(I drop the lids in the water to sterilize them). Pour out water. Turn jar over until ready to use.

Bring juice, water, sugar and vinegar to a boil.
Put 2 cans of beets into jar. Pour mixture over beets almost to top of jar. Add pickling spice to jar. Put on lid and it should seal within a few minutes.

I take the juice from the second can of beets and make pickled eggs with the same recipe.

BBQ Sauce

32 oz. tomato sauce
1/2 cup vinegar
1/2 cup brown sugar
1/2 cup oil
1/2 tsp. hot sauce
2 tbsp. onion flakes

Mix all. Bring to a boil and simmer 30 min.

Cook beef or pork. Add a little at a time to sauce. Don't put too much meat in sauce. Leave it saucy as it will absorb into the meat. Refrigerate overnight. This makes quite a lot so you may want to fix only half a recipe.
