I've got no problem with it. I hope he's trucking all the guts to dump on Bev Perdue's front doorstep. Her Nancy Pelosi style damage will never be undone.

I heard Reggie "big boy" got coughs having sex with his girlfriend kasey in the meat cutting room by a customer..idk about y'all but I don't want my meat cut in the same place his meat is getting beat..I also heard he took deer feet a warped them up in freezer paper an wrote "tenderloin" on it..don't think ill take my business there

Reggie is a very nice guy. Took a couple of deer for processing a few years ago. Total weight was 250 lbs. Got a total of 50 lbs dressed back. The avg. whitetail dresses out at about 51.7% of body weight. We should have had about 128.25 lbs of processed meat. The meat was clean. No problem. Either one of two things happened: there was too much wasted during the processing or we did not get it all back. Took a 108 lb. doe to Buckshot on Sugar & Wine Rd and got back 55.8 lbs dressed out. It was vacuumed wraped. There is no waste there. You get what you pay for.

I took a 140lb buck down there an got back 14lbs of meat..when I asked Reggie about the rest of my meat he told me not to shoot them in the neck...seriously what about my other 40 lbs of meat..that guy is a damn joke.

There is a possibility that the guy has got so much liability issues on him these days from this bureaucratic and legal overreach, that the guy is just plain afraid to give you back anything imperfect, and much gets wasted. The poor guy could get sued if the dear you shot fell into some briars, and a briar got embedded in the meat, and you ate it and died from a briar stuck in your throat. It seems game hunting implies you dress out your own kill. And if the deer was eaten up with cancer, and you dressed it and ate it ignorantly, it's your own doing.

I understand the liability concept but remember, you are not taking the deer to a state inspected facility. In speaking of the 51.7% pounds of edible lean boneless tissue, this is considering the fact that the deer was shot in the rib cage or head, it appeared to be healthy with no prior damage(injuries)and was visibly disease free. Once again, Reggie is a great guy. The meat was clean, well packaged and good when cooked. The only issue I had was the amount of processed deer that I received, considering the above facts. I was later told that at this time, Reggie had some high school guys helping do the processing and they
would get in a hurry and were observed on more than one occasion wasting GOOD meat.

Reggie Ratliff is lazy an has other people do his work while he pays them (high school kids) less than $50 to work 15 an 16 hour days.

I will never take another deer to Reggie Ratliff...he has a 16 & 17 year old cutting all his meat..I took a 120lb doe down there an got back 9 lbs of get charged me $65 for it..I didn't even get what I asked for & when I asked to speak with Reggie 4 different times all the people down there said he don't ever work here he juss tells us what to do an sits on his ass all day..if the people who work for U tell me that then u shouldn't own a deer processing plant if u do none of the work...

Butchering a deer is difficult. Many hunters field dress game and then try to butcher the carcass later themselvers. Most of them don't know the proper way. The meat produced by people that don't know what they are doing is often very "gamey" tasting. Sometimes it is unfit to eat no matter how it is prepared.

Skinned and gutted deer carcasses should be hung and allowed to age in a cool, dry environment. The larger the deer the longer it should age. The meat is considered aged if it is firm on the surface but "spongy" feeling with increased pressure. The butcher should locate all wounds and cut and remove the meat in the area of the wound to insure that none of the meat is infected or rotting. A visual inspection is then done to locate any bruises, sores or visible parasites. If they are found the flesh is washed and cut away then reinspected. The next step is the actual butchering process determined by what the customer asks for.

Deer fat is nasty tasting and leaving any but light marbling will make the meat have a heavy "gamey flavor. Another thing that should be cut away and discarded is the thick silver skin. Silver skin makes the meat have a sour odor and taste. The very fine silver skin found on some parts is not as bad and many butchers leave a little. We try to remove all we see.

We have some customers complain about the loss of pounds but most understand that there is greater part of game that is inedible than that which is edible. I have had customers ask me to package all that I cut away and weigh it along with the processed meat so that they can see what we are talking about here. 9 out of 10 are satisfied once they see this. There is always some jerk who is convinced everybody is out to cheat him.

Well, that it in a nutshell. If any of you want to learn to butcher take the classes or apprentice to a certified butcher for a year. Then buy about $700-$1000 worth of butcher knives and equipment. Then buy several thousand dollars worth of electric meat grinders, slicers and a walk in cooler. Rent a building and advertise. Then you can understand why we charge what we do.

Yeah I agree never again will I take a deer to big boy..his place smells awful an he has kids cutting his meat for him..went to pick up meat from a 120 lb doe I took down there an got back 6 pounds if meat & one of the guys working there was smoking a joint when I pulled up...I'll take my business to buck shot next year.
