I was there, and I posted a very creative, thoughtful review on the last thread, which was promptly deleted. The Cavallo family should take the criticisms in the last thread to heart.

1. The decor is incredibly tacky. It was a rush job, and it has no class. Since it was deleted last time, I will write it again: the place the place looks like the finished basement of a middle aged Italian divorcee. Think fake grapes and particleboard cutouts from Kirkland that say things like "Bells Vita." Unprofessional. This place caters to the middle aged hag crowd, their husbands who have no choice in the master and dipsticks who think that drinking wine, even if it's swill (not that they know it), makes them somehow classy or sophisticated. IT DOESN'T.

As an earlier poster said, they need to pull their heads out of the Utica sewers, and get some ideas from outside the 315.

2. The wine selection is HORRIBLE. They clearly have no idea what they're doing, and it shows. Ask the server about the wine, and you're likely to get as intelligent a response as if you asked a guy who works at Arby's about various cuts of beef. Ignorance abounds. And for God's sake, learn how to properly pour wine and which glasses to use. This should be easy, but they screwed it up for me at Corked.

3. The name is awful, and shows the general ignorance of the Cavallo family when it comes to wine. CORKED WINE = WINE RENDERED UNPALATABLE BY A FUNGAL INFESTATION OF THE CORK. Anyone who has any knowledge of wine knows this, even an introductory interest. The Cavallo family, apparently, did not. I would say maybe it's a play on words or a joke, but let's face it, it was their general ignorance that led them to choose this name. OOPSIE! Now everyone knows you have no idea what you're doing!

Long story short: nice idea, but backed up by a lazy, ham fisted and rushed execution, an all-encompassing lack of knowledge of the wine business, and the hubris to shut down critics rather than meaningfully respond to what is clearly a flawed business plan and try to correct and improve a flawed execution.

Go ahead, delete this thread, too. I know how it hurts to hear the truth. The family may be big fish in the shit pond that is the village of New Hartford, but their dubiously-named "wine bar" wouldn't last two months in a larger market (even Syracuse), not that I would have my money on it staying around for the long haul even in Utica.

Good restaurateurs improve based upon the criticim; bad ones dig in, and do nothing more than blame the reviewer.

This is the exact reason it will flop. When it starts hitting you in the pocketbook and I'm sure it soon will after the novelty wears off, you will realize that you should take constructive criticism and correct your mistakes and move on. Plan B is let it flop, sell the place to the highest bidder and live off of daddy's money until that well runs dry. Cheers.

You obviously don't know what a bar or restaurant review is. You again go back to "coward." It's not like I'm challenging the virtue of some guy's wife here. It's a comment on the quality of ambiance, drink and service at a bar. Apparently all restaurant reviewers are "cowards," as those who the best restaurants care about the most are all anonymous (Michelin, AAA, NY Times, etc.).

People may agree with you once in a while if you didn't run to every forum to piss and moan. Yet every post is one complaint after another, so why would anyone take your opinion serious when there is an evident bias? Also, did you mention any of this while you were at the bar. Did you mention to the proprietor your experience in restaurant management and your time as a food critic?

Not sure why anyone would want to go a wine bar which by its name suggests it offers a product which is not drinkable. It's like naming a restaurant "Rancid" or "Tainted". Too bad, but I guess the owners must not understand wine too well....
