It is seasoned with a thick rub before slow cooking. Some inject flavor into the meat also. Then wrapped to finish, sauce is optional. Actually I think it best without the sauce. I am a yankee but I love authentic southern Barbecue. My friend sends me her homemade rub, you cannot buy that!

Nathan is right. Never thought I'd sat that but he is right. :) Real southern style BBQ doesn't get sauce as it is smoked. It is served with the food to be used as the diner sees fit.

The only person who is correct, it's the person who said BBQ is cooked in an open pit slowly. That is the true method of real BBQ. Anything else may be referred to as such, but its not. Sauce is in fact a condiment.

Ordered from Homey's once, wasn't a bit impressed. Pappy's is on the main drag in Brazil, on the southside of US40. They got parking in the back.

I will have to make a special trip over there. I do enjoy some good barbeque.

While we are on the subject. Does anyone know if Shoe's B sauce can be bought somewhere? I seen some for sale sometime back at the Locust Street IGA and not since then. Has anyone seen his sauce on any store shelves anywhere?

Make your own..Apple Cider..Ketchup..Brown Sugar..Worcestershire Sauce..Butter..Salt..Hot Pepper Sauce..Contrary to Northern beliefs true Southern Barbecue Sauce is not overly Thick and sweet..I tried Shoe's sauce years back and it was close to this recipe..

I've eaten BBQ all over the US. In the south they prefer a vinegar based sauce, and in the north, the sweet/hot sauce (which I personally prefer). I spent a couple weeks in North Carolina, and I could not find a barbeque joint that DIDN'T have a vinegar based sauce.My favorite barbeque that I ever found was Lark's barbeque in Benton Harbor, Michigan. They smoke their meat right outside the restaurant for 12 hours, and they use nothing but oak. I like Rick's and Homey's, but they are not quite up to Larks. And, for a change, Nathan had some actually positive input to this thread. Too bad he had to rant on a few posts, though.
