My wife is from St. Martinville and loves Coushe Couche. I wnated to surprise her and make it for her but cannot find a recpe that I know is from her home. Can someone give me a recipe. Thank You.

Believe it or not, authentic Coushe coushe. Or Cous Cous as it is known elsewhere is very simple. Post your question on the 70533 topix site. it is much more active than this one.
I got the desire for some good old fashion coushe coushe, and I called my mom. Ingredients? Cornmeal, salt and water. Mix it up in a bowl. Start off with about 2 cups of cornmeal, and a teaspoon of salt. add water until it looks like thick cake batter. take a black iron pot, and oil it up pretty good. put the fire on a for a couple minutes before you pour the batter in. Pour the batter in. A medium fire for about 20 minutes or so. Don't stir it, because you want it to make a crust on the parts that are touching the pot.
This is the basic recipe. I like mine a little richer, so I add a teaspoon of vanilla and a 1/4 cup of sugar. I suppose you could use milk instead of water to make it more flavorful. You could also use bacon drippings instead of plain cooking oil. You could also add minced bacon and a bit of pepper if you like.
Its kinda like baking cornbread in a pot.
First time I tried it, I didn't leave the fire on long enough to make a thick crust on the parts touching the pot.
