Scarborough Terrace Dining Director Shares Healthy Holiday Eating Tips

With Thanksgiving quickly approaching, many people are thinking of ways to indulge without getting the bulge. In honor of American Diabetes Month, Scarborough Terrace Assisted Living’s dining director David Sinclair, is helping the community with healthy holiday tips and he’s even providing his favorite sugar-free Pumpkin Cake recipe for Thanksgiving Day.
“Handling diabetes is all about managing the disease through diet, exercise and keeping your health care provider informed,” said Sinclair.“A little less than 20 percent of our residents are diabetic, so creating healthy meals is important. At Scarborough Terrace, the residents agreed to move our larger meal to the afternoon allowing them more time to burn up those calories instead of eating a big meal and going to bed a couple of hours later. We then encourage the residents to partake in afternoon walks on our walking trail in between our larger meal and dinner. Moving the time of the big feast and going on a family walk are both good ideas for anyone dealing with diabetes to remember during the holidays.”
During his 16 years at Scarborough Terrace, Sinclair has seen an increase in the number of new residents who are dealing with the difficulties of diabetes. Currently, around 25.8 million people are affected by the disease according to the American Diabetes Association. The Association uses the month of November to focus on raising awareness of the disease around a time when so much attention is put on food. Sinclair explains that the desserts are really the only place where the menu differs between the residents with and without diabetes. The diabetic residents are on a No Concentrated Sweets diet, so Scarborough Terrace substitutes the main dessert with its sugar-free equivalent.
“We pay special attention to our residents’ physical health as well as their emotional health, and we do our best to make sure the residents with diabetes don’t feel left out,” said Terry Huntley, RN and executive director for Scarborough Terrace.“Every meal is well-balanced with the right portion size and a similar, sugar-free desert is included.”
Autumn Pumpkin Cake with Maple Cream Cheese Frosting
16 oz. sugar free white cake mix
1 c pumpkin puree
½ tsp. cinnamon
¼ tsp. allspice
¼ tsp. ground clove
Pre-heat oven to 350 degrees. Blend cake mix according to directions. Add pumpkin and spices. Blend well. Use non-stick baking spray to coat a 12 x 9 x 3 pan. Add batter and bake approximately 20 minutes. Quickly insert a toothpick in the center of the cake. When it comes out clean, the cake is ready. Let cool before frosting.
8 oz. cream cheese
2 T unsalted butter
½ tsp. vanilla
1 T sugar-free maple syrup
¼ c. Splenda
1 T milk
Blend until smooth and spread on top of cool cake.
Drizzle sugar-free caramel topping over cake and plate before serving.
