Actually it was a teenager in high school who thought up the slogan and drew the picture used. She was, and still is a very sweet young lady who is now grown with a family of her own. Call her a dreamer if you like, but it's not her fault the idiots who live here don't know how to live up to the slogan. We encourage our children to do good things and have hope in humanity, but invariably there are just too many stupid adults who sabotage our efforts. Personally, I applaud her for at least trying.

agree. too bad the commission or whomever adopted it couldn't have it impact the behavior of the adults who had to live up to it. although i must admit, after over 2 years as a resident in the county, folks here are very friendly...face-to-face that is.

Anyway, I'm hoping that some of Wallace's Hickory House's former guests may be able to help with a little research. My name's Grant and I co-write a food blog called Marie, Let's Eat!-

- and we have a particular interest in the regional BBQ called "Hudson's-style sauce" after Hudson's in Douglasville, where it was concocted in the late 1960s. I'm referring to a thin and very dark red vinegar-based sauce, with Worcestershire and pepper, and the meat is usually served drowned in it. Other hallmarks of Hudson's-inspired restaurants include a very hot mustard/cayenne sauce on the tables, hand-cut "floppy" fries, and the inclusion on the menu of lower-priced "thrift" plates.

Other restaurants to prepare their BBQ in a style after Hudson include Wallace (Austell), J&W (formerly Jordan's, Carrollton), Johnny's (Powder Springs) and Davis (Jasper), and a few others.

Just learning of the name of this restaurant prompted me to wonder whether its owners were related to the Wallaces of Austell, and whether they prepared their BBQ in this fashion. Any help would be greatly appreciated!

We've only been through Cedartown once for our blog, and visited Lively's Owens, enjoying the meal. I regret that we didn't get the chance to document Wallace's Hickory House, but hopefully we can come through town and try Bar-L sometime soon.

I am sure someone will read this and respond. I don't know that much of Wallaces, but was wondering if you also had tried Dallas BBQ. It has been there for many years. They chop the meat right in front of you and it smells like heaven. Really good. I think the best around NW Ga. The meat is cooked just right and tender. It also looks like a BBQ joint! All about the Q!
