I baked the Bohemian rye bread. It turned out well but I had to use 10 cups of white flour instead of the 3 that was listed in the recipe. I think the recipe is incorrect listing 5 cups of water as I ended up tripling the white flour. Thought you would like to know. I started using my kitchen aide mixer and finished up kneading it by hand.

Dear Donna,
I read your recipe for Bohemian Rye Bread in the Anchorage Daily News. I appreciated learning to about vital wheat gluten, and hydrating rye flour before adding it to a bread recipe. Both techniques really improved the bread I made this weekend. However, I wonder about the amount of water in the recipe. Five total cups of water to 6 cups of flour seems an unusual amount of water even given that the rye flower is hydrated overnight. I lost track of the amount of extra flour I added after three cups. The bread with addition of extra flour was excellent.

I read the comments about Bohemian Style flour but could not find the information about the wheat to rye four measures. Could someone please post them again? Better yet, email me at [email protected]
I male Swedish Rye Bread and the Bohemian Style flour is a key ingredient.

Just mixed up a batch of the bread and had the same problem. I looked up a recipe from my mother using the no longer sold Pillsbury bohemian rye flour and it used 4 cups of liquid and 11-12 cups of flour.
