Dude?! Huddle house is no comparison to IHOP. But they are going to need some good employees to make it work.

Don't know the name of the new restaurant, but rest assured: The fare will be boring & bland, with maybe a little salt to flavor it, the prices will be low to mid-range. The offerings will land heavily on the fried and gravy soaked side. Potatoes will figure heavily here. This will attract traveling families who are staying at the hotels surrounding the restaurant. It probably won't be anything extraordinary. Typical bacon and eggs..burgers..maybe some tired looking salads and orange colored soup. Some pasta, meatloaf or chicken.

If you are a borderline competent cook, you could do the same or better at home in your own kitchen for cheaper. JS.

I agree here. Natchitoches is a culinary wasteland. Caters to the tourist and not the local. Wait, that's the entire town.

It is indeed an ihop, I just found this:

The long term lease of the 5,115 square foot building should assure IHOP will serve the Natchitoches market and I-49 motorists for many years.
The building will undergo extensive renovation prior to IHOP’s opening, projected for late 2012 or early 2013 Grand Opening."

We need a place to eat that stays open until 11pm and serves food not that stuff Ihop and chili's sell. A place that is not as expensive and front street restaurants.

I think Ihop is a great idea. We can never get pancakes around here or a nice breakfast. I will definitely be happy to see them! And they have a pretty decent variety and prices. Good for us working-class folks!

This is long overdue--a quality chain that doesn't serve fast food out by the interstate. Shoney's really wasn't that good. IHOP does have a good variety of menu items. I just hope they can find some good employees.

What would be wrong with one of the storefronts used as a mini international food court, kind of like a buffet or cafeteria setup? What's wrong with the NSU Culinary Arts students being at the helm of a project like this? Every kind of ethnic food I can think of has dishes that inexpensive to prepare and serve. Pass the savings along to the consumers and wind up with some happy satisfied customers who don't feel like they are being gouged when they go out to eat.
