actually in various cultures, being obese was a sign of wealth. since you had the riches to expend on a lot of food. and could eat very well.

butter in moderation is better for you than any amount of margarine is.

and one can substitute olive oil for margarine and or butter if one wants to.

No margarine in my home either. I even go so far as to buy plain white microwave popcorn and add real butter. If Bloomberg wants to go after something, he should go after that yellow transmission fluid they call butter in movie theaters. But he is probably already crafting legislation to ban popcorn because you could choke on the hulls.

Who cooks with lard? you just have'nt eaten real soulfood cooked by a person who puts love in their cooking,and greens cooked with butter? I have never heard or tasted such a nasty dish? have you ever eaten ox tail stew? hmmm good?or what about Gumbo?do you know difference between european and soul food potatoe salad?

there are recipes still that require lard or it's substitute - shortening.

some birds like geese we found out need that extra bit of 'help' that lard can give.

as for ox tail bones. they are good in soups. just like neckbones are too. especially if you use a crockpot to cook them in and take your time like two days to make the stuff.
