If you are going to hit a deer - the best thing to do is take your foot off the gas, but avoid braking until impact. If you hit the brakes, you lower the front end and the deer may come through your windshield.
If you are about to hit a moose - duck - it will definitely come through your windshield and probably shear off the top off your vehicle (along with your head!).
