What's the best you got? I love Cajun food, but I want the real thing. A lot of restaurants just think that throwing some cayenne pepper on something makes it Cajun.

Louisiana Public Broadcasting offers some excellent cookbooks containing recipes from some of louisiana's finest chefs including John Folse, Paul Prudhome, Emiril Lagasse and many others.
