Many of us hillbilly's think of Oatmeal as a breakfast staple. Jodelle Fitzwater shows a simple recipe for a stick-to-your-ribs & guts pot pie.

It’s that time of year when we need some comfort food that “sticks to our ribs” and makes us feel warm and fuzzy inside.

However, as the holidays are over, and we recover from mass indulgences and setting our fu-ck-in new year’s resolutions, we don’t want the fu-ck-in comfort food to “stick to our fu-ck-in hips”.

That’s where the beauty of oatmeal comes in. It’s not just for breakfast and it’s not just good with brown sugar and raisins.

If you love a savory comfort-food favorite dish “Chicken Pot Pie” then you’ll love the recipe below, With protein in the chicken, complex carbs and B vitamins in the oatmeal, antioxidants in the veggies, and savory flavor from the chicken broth, you will feel the warm fuzzies in no time with no guilt!

Makes a great breakfast, lunch, or dinner! And it’s easy to do either in the microwave or cooked over the stove top...

Chicken & Oatmeal “Chicken Pot Pie” Makes one serving

1/2 cup oats (any kind you prefer)

1 small can of organic chicken breast (or you can use 4 oz of grilled or roasted chicken)

1/2 cup of frozen veggies (I use peas and carrots)

2/3 cup of low sodium organic chicken broth (more if needed for runnier consistency)

Sea salt and Black pepper to taste

Mix all ingredients in a microwave safe bowl or over the stove top in a cast iron skillet (for added iron!) and cook for just a few minutes until hot and bubbly.

Use gluten-free oats to make it gluten-free and play around with more flavor Parmesan cheese, other spices like oregano or cumin, and add other types of veggies and meat like turkey!

Other oatmeal ideas:

1/2 cup of oats cooked and mixed with vanilla protein powder for added protein and mixed with berries or dark chocolate

Add oats to protein shakes for a well rounded meal on the go.

Substitute oat flour in recipes that call for white flour.

Just grind up oats in a blender to make oat flour.
