Dude, people say, "Happy Holidays" because not only Christmas happens around this time but Hanukah and Kwanza does too. Do you really want to here, "Happy Christmas, Kwanza, Hanukah, or your favorite non-denominational holiday, to you!"? Christmas isn't the only holiday at this time of year so stop being so self righteous and be more "Christian like".

Actually Dec 25th was a pagan holiday adopted by the Nicene Council as the day to celebrate the birth of Jesus. It is believed the date is actually a couple of months off. They adopted the 12/25 date to help incorporate the pagans into christianity so they could have better control of them.

I guess you want jewish people to have a miserable time at hannukah? The whole point of saying Happy Holidays is to incorporate all religious and secular beliefs which occur at that time of year. Hannukah, Ramadan, Kwanzaa, Winter Soltice, etc. You never know when the person you're greeting may observe one of those holidays.
