i would like for anyone to please post how to make canned kraut. please list all different ways that you know of. also does anyone know how to make old fashioned salt pickles. not dill but salt pickles like our grandparents used to keep in a big barrel covered with a large towel. thanks

I ask my niece(she makes the best kraut in Mcdowell Co.) and she said to pack the shredded cabbage into quart jars,add a heaping teaspoon of salt, cover with water, tighten lids and do not open for one month. She said to make the kraut when the signs are in the head. Sorry, don't know about the pickles, try googling it.
no canner but wish I was

Hot or cold water, How do you know when the signs are in the head?

Use cold water,hot water would make it not so crunchy. The Old Farmers almanac is where you find the signs. I don't know why it has to be in the signs, might be an old wives tale. Anyway, that is the way my niece does hers and it is delicious. Try googling the old Farmers Almanac. Oh, and some times she mixes a few canned green beans and a little canned corn in it. You can also put chopped bannana peppers too. Good Kuck !! See if you can google the almanac, I think they are a little expensive.///if I can find this info for you, I will Post it.
